Vegetarian BBQ - The Lemon Tree

Barbecue season is well and truly upon us and as a vegetarian, this is a time of year I always dread. In the past, BBQ food for me has consisted of very little more than a soy based meat alternative, not very exciting. However over the years I've acquired a list of vegetable based BBQ recipes that both vegetarians can enjoy. 

So here it is, my top 3 meat free BBQ foods (ingredients listed):

3. Carrot & Sesame Burgers.

Carrot and sesame burgers are delicious, light and colourful - a great summer dish. 

Carrot & Sesame Burgers - Cooking Instructions

 Ingredients:

750g Carrots
3tbsp Sesame Seeds
410g Tinned Chick Peas
1 Small Onion
2tbsp Tahini Paste
1tbsp Ground Cumin
1 Egg
3tbsp Olive Oil
100g Wholemeal Breadcrumbs 
1 Lemon zest & 1tbsp Juice 
150ml Natural Yoghurt 
6 Buns 
Rocket Leaves, Sliced Red Onion, Avocado & Chilli Sauce (to preference) 

2. Stuffed Peppers.

Stuffed Peppers look great and like they take a lot more work and effort than they do in reality. Say hello to a barbecue dish that is sure to impress your guests.

Stuffed Peppers - Cooking Instructions

Ingredients:

2tbsp Olive Oil
3 Red & 2 Yellow Peppers
50g Pine Nuts
140g Long Grain Rice
2 Garlic Cloves (Chopped)
350g Veg Stock
1 Bunch Spring Onions (Chopped Thinly)
140g Cherry Tomatoes (Halved)
150g Mozzarella
140g Gorgonzola 
A Hand Full or Parsley and Basil
String (For Tying)

1. Tikka Skewers.

Tikka Skewers are and always will be my favourite veggie BBQ dish. They're a tasty, meat free twist on a BBQ classic. 

Tikka Skewers - Cooking Ingredients

Ingredients:
3tbsp Tikka Paste
500g Tub Yoghurt
2tbsp Cumin Seeds
Thumb Sized Piece (Grated)
250g New Potatoes
300g Paneer Cheese (Chunked)
3 Red Onions (Cut Into Wedges)
2 Red Peppers
5tbsp Mango Chutney
Mint Leaves
250g Salad Leaves
12 Chapatis
